Gilles Bouton Chassagne Montrachet 'Concis du Champs' 2019
Chassagne-Montrachet has fantastic terroir for both white and red Burgundy and this village AOC reflects this. Ripe red fruit profile with some pomegranate juice, pepper, smoke and ripe leaf. The firm acidity hold all the elements in balance.
Gilles Bouton Saint Aubin 1er Cru 'en Creot' 2018
Garnet robe with bright fruits, raspberry, black currant, black cherry, seasoned with spice and coffee. Full bodied but silky with a lively fruit finish.
Saint Aubin 1er Cru 'En Remilly' 2018
‘En Remilly’ is arguably the best of the Saint Aubin premier cru vineyards. It falls from a steep, south-facing hillside which is an extension of the Grand Cru ‘Le Montrachet’ as the slopes follow the valley. The soil make-up (if you can even call it soil!) is pretty much crushed gravel, making for one of the most mineral whites in the zone. Floral, flinty and citric, it’s one of the great discoveries in white Burgundy.
Saint Aubin 1er Cru 'Les Champlots' 2018
We met Gilles Bouton back in the days of our hotel-barge Le Papillon when we were cruising the inland waterways in search of the real Burgundy. I remember the first taste of his Saint-Aubin 1er Cru ‘en Remilly’, thinking we had discovered the best deal in white Burgundy ever. Gilles Bouton took the reins of his maternal grandfather’s 4 hectare (9.6 acre) domain in 1977. The holding now totals 15 hectares (36 acres) and is spread out over four villages (Saint Aubin, Chassagne-Montrachet, Puligny-Montrachet and Meursault) all prime property in the so-called Golden Triangle of white Burgundy. Gilles was joined by his son, Julien, at the end of 2008. The domain today makes on average 60,000 bottles per year. The Boutons sell most of their wine to private individuals either out-the-door at the domain or at numerous wine salons in France. From a steep south-west facing slope overlooking the village of Gamay, Les Champlots gets the full afternoon sun, and is hence always that bit more exuberant than the ‘En Remilly’ from the other side of the hill. Expressive, floral, and orange-blossom citric, it’s supple and well-balanced, with a smoky mineral in the finish.
Domaine Gilles Bouton Puligny-Montrachet 1er Cru 'La Garenne' 2018
Gilles Bouton’s Puligny-Montrachet 1er Cru ‘La Garenne’ touches the premier cru ‘Champs gains’ as well as the Saint Aubin 1er Cru ‘Murgers de Dents de Chien’ (which Gille also has a holding in. So we are in noble vineyard territory here. This is a golden wine, in many senses of the word. Ripe fruit, almond undertones, green apple minerality. Toasty croissant and flint combine in the mid-palate with just a touch of honey. Subtle and balanced. Concentrated. ‘Harmonious’ is the word that springs to mind.
Gilles has two different parcels in this, the best known of the Saint-Aubin premier crus. One with old vines, situated near the Puligny-Montrachet 1er Cru ‘Les Garennes’ (which he also makes), and the other near Puligny 1er Cru ‘Folatieres’. He makes these wine in double-sized barrels, 40% new oak, to tame the tannins. There is a deep, almost Meursault quality to the Dents de Chien, spicy and complex. Great continuity from attack, through mid-palate and on to a superb finish.
