Welcome to May in Burgundy!
May is a special month in France, packed with public holidays that offer the chance to truly unwind. This year, May 1st is Labor Day, May 8th marks VE Day, Mother's Day falls on May 25th, and the Feast of the Ascension is on May 29th. The French can enjoy some long weekends—potentially 15 days off in total. It's a perfect time to relax, savor the changing season as spring gives way to summer and perpare for the busy season to come. And yes, for most of us thoughts turn to travel at this time of the year.
Each month we like to include a piece about an outstanding Burgundy destination. We take wine lovers staying at Cromey to famous and historic places such as Dijon and Beaune, but Auxerre, a hidden gem in northern Burgundy, sitting at the heart of the Chablis and Auxerrois regions is truly striking. The town boasts stunning medieval architecture, including three imposing cathedrals rising above the river Yonne. This edition features an article on this historic region and wine capital. Let us take you there!
Also in this issue, we also spotlight remarkable women winemakers. In Chablis, the Oudin sisters defy convention by pruning their vines short—choosing quality over yield despite the risks of spring frost. When it works, the results are outstanding. You'll also find bold innovation from Agnes Paquet. Elodie Roy is certainly one to watch—she returned to her family’s modest Maranges estate after working with Domaine Anne Gros and is producing great wines expressive of the terroir. And then there is Ludivine Griveau, who has transformed the historic Hospices de Beaune vineyards.
These women are in the vanguard: passionate, adventurous, and focused on overlooked terroirs. Great value and discovery await those who follow producers, not just famous labels.
As regular readers of this newsletter know, cuisine is a passion for us here at Cromey, and so every month we write about some interesting aspect of food in Burgundy. While slow-cooked classics like boeuf bourguignon often get the spotlight, this month we highlight delicious baked dishes from the region’s rich culinary heritage.

RED & WHITE BURGUNDY
Spotlight on Domaine Jean Fery
Domaine Jean Fery has long been our post-modern benchmark for Burgundy, a producer we’ve proudly championed as their reputation has continued to rise. Their wines—both red and white—are precise, chiseled, and fine, showing the kind of clarity and structure that stops you in your tracks. This is biodynamic winemaking at its most compelling—crystalline, pure, and powerful.
Explore the wines of the Côte Chalonnaise
This case is your invitation to experience the distinct expressions of this underrated region. Discover vibrant reds and elegant whites that reflect the nuanced geography of a place where tradition meets frontier. Whether you're exploring for the first time or revisiting a favorite, these wines are a reminder that great Burgundy doesn’t always follow the beaten path.
RED BURGUNDY
2018 and 2020 RED Domaine De Suremain Rully 1er Cru 'Preaux'
Very pretty Pinot Noir. This premier cru Rully from the Cote Chalonnaise throws out a range of complexity from red currant acidity to black cherry suavity. A touch of rusticity in the tannins brings out a freshness and vivacity that makes this wine approachable now, and that will make it magnificent in 4-5 years’ time.
