Left Bank, Right Bank...and in between

It was bound to happen.
Fabien Dauvissat's march to excellence has arrived at an inevitable turning point:
He only has so much wine to offer
BUT...an astounding array of sublime Chablis 'tout court' (as they call 'village' Chablis locally)

So he has decided to produce Chablis village from several single-vineyard parcels. Fabien has offered us two of these 'parcellaire' Chablis from the superb 2023 vintage.

The River Serein runs through the Chablis valley. Wines from the left bank are more mineral and fresh; wines from the right bank are rounder and opulent.

Jean Dauvissat Pere et Fils Chablis 'Bas de Fourchaume’ 2023
The parcel named "Bas de Fourchaume" is located, as its name indicates, under the Premier Cru Fourchaume. Classified in the Chablis appellation, this bottom of the hillside benefits from the same South-South/West exposure as the premier cru, with deeper clay-loam soil. Long maceration on fine lees. Part in stainless steel, part in 600l oak demi-muits. Assembled after 12 months, and then another 6 months of maturation 'en masse'.  Light fining and filtering, but not cold treated, to preserve aromatic finesse.

Here we have two vineyards (Mont-Main and Sourdelles), situated in the village of Beines in front of two of the best ‘left-bank premiers crus (Côtes de Lechet and Vau de Vey) Given the Left Bank exposure, it’s not surprising to find a steely minerality and a lean, laser-beam expression of the fruit and floral bouquet that is village Chablis. Exquisite precision.
