So have taken to holding the wines  from his best vineyards for release when they reach optimum maturity

And in 2018 'optimum maturity' did not mean 'fruit maturity'. 2018 was a hot year,  and in 2018, 'lesser' Chablis lacks acidity .

But, by contrast, in the noblest vineyards, 2018 shows off Chablis 'terroir' like few recent vintages can.

Montmains, a Left Bank Chablis premier cru, is perhaps the best ‘all-around’ example of what Chablis should be.  It comes from a very rocky soil which gives a very pronounced minerality with extraordinary power and good aging potential. At the same time, it is ample, full and round.  It can be tight in its youth, but is characteristically exuberant and vivacious.

This Chablis 1er Cru ‘Vaillons’ is remarkable for its limpidity; it catches light and reflects it like a jewel. Vigorous and full, this is a big wine with fat decadent spicy fruit and deep lingering minerality. Balanced and precise from the attack, through the mid-palate to the long finish, this is a very well-made wine.
